Formal Meal
One of my favorite assignments from this class was the Formal Meal. One week, half of the class prepped and prepared a five course meal. The other half of the class was served this meal. Then, a second week, the class switched around. As for learning experiences, there were several. Those who were dining practiced formal dining, including eating European style during the main course. We also learned about proper table etiquette, gaining skills that can be transferred into the business world. As for preparation, we learned how to work as a large team, assigning tasks to people, hoping they finish them. It had a feel of an industrial kitchen, when we all relied on each other. We also learned how to properly serve, including lowering the plate on the left and raising the finished plate on the right. Overall, we all learned about formal meals, how to eat properly, and how to prepare for a large number of people.
The week I ate, we had a menu of Cucumber Feta Rolls, Virgin Lime Mojito, Light Herb Salad with Classic French Vinaigrette, Petite Sirah Sorbet, Chicken Chasseur, Rice with Peas and Pancetta, French Silk Ice Cream Roll, and Coffee.
The week I served and cooked, we had a menu of Baked Stuffed Mushrooms, Roasted Tomato Soup with Braided Breadsticks, Lemon-Mint Sorbet, Roasted Salmon with Lemon-Ginger Butter served atop fresh Asparagus, and a duo of desserts of Chocolate Cake with Ganache and Cheesecake Cupcake with Salted Caramel Sauce, served with coffee. All of the food was absolutely delicious! These were definitely my favorite two weeks of class.
